Tasteful Thursday - Caribbean Jerk Chicken with Mango Salsa
Recipe: Caribbean Jerk Chicken with Mango Salsa

Yield: 4 servings
Serving size: 4 ounces chicken and ¼ cup prepared salsa
Caribbean Jerk Chicken
1 pound boneless, skinless chicken breasts
2 Tbsp Caribbean Jerk seasoning
2 tsp extra virgin olive oil
1 fresh ripe mango, peeled and diced
½ cup red onion, diced
1 Roma tomato, diced
2 Tbsp cilantro, finely chopped
1 tsp lime zest
2 tsp lime juice
¼ tsp salt
Prepare the salsa: In a medium size bowl add all of the ingredients and stir to combine. Refrigerate until ready to serve.
Prepare the chicken: Slice the chicken breasts in half lengthwise to make four, 4-ounce size chicken breasts. Place the chicken breasts in a large resealable bag and add the Jerk seasoning. Give the bag a few shakes to evenly coat the the chicken.
In a large skillet over medium heat, add the olive oil. Once heated, add the chicken and cook for about 4 to 6 minutes on each side or until done.
Serve warm with the prepared Mango Salsa.
