Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 Tbsp Caribbean Jerk seasoning
- 2 tsp extra virgin olive oil
- 1 fresh ripe mango, peeled and diced
- ½ cup red onion, diced
- 1 Roma tomato, diced
- 2 Tbsp cilantro, finely chopped
- 1 tsp lime zest
- 2 tsp lime juice
- ¼ tsp salt

Mango Salsa
Instructions
- Prepare the salsa: In a medium size bowl add all of the ingredients and stir to combine. Refrigerate until ready to serve.
- Prepare the chicken: Slice the chicken breasts in half lengthwise to make four, 4-ounce size chicken breasts. Place the chicken breasts in a large resealable bag and add the Jerk seasoning. Give the bag a few shakes to evenly coat the the chicken.
- In a large skillet over medium heat, add the olive oil. Once heated, add the chicken and cook for about 4 to 6 minutes on each side or until done.
- Serve warm with the prepared Mango Salsa.
