Tasteful Thursday

Egg White Burrito
Total Time: 17 min.
Prep Time: 10 min.
Cooking Time: 7 min.
Yield: 1 serving
Ingredients:
1 Tbsp. olive oil
1 Tbsp. finely chopped red bell pepper
1 Tbsp. finely chopped yellow bell pepper
1 Tbsp. finely chopped green bell pepper
1 Tbsp. finely chopped red onion
3 large egg whites (1/3 cup)
1 (8-inch) whole wheat flour tortilla, warm
1 slice low-sodium turkey bacon, cooked, chopped
Ground black pepper (to taste; optional)
2 Tbsp. fresh tomato salsa
Preparation:
1. Heat oil in medium nonstick skillet over medium-high heat.
2. Add bell peppers and onion; cook, stirring frequently, for 3 to 4 minutes or until soft.
3. Add eggs; cook, over medium heat, stirring frequently, for 2 to 3 minutes, or until eggs are set.
4. Top tortilla with egg mixture, turkey bacon, and pepper (if desired).
5. Roll tortilla burrito-style.
6. Serve with salsa.

Tasteful Thursday




Skinny Cheeseburger Casserole
Prep time: 20 minutes
Cook time: 25 minutes
Yield: 8 servings
Serving size: 1 cup
Ingredients
2 cups whole wheat elbow macaroni, uncooked
2 tsp extra virgin olive oil
½ onion, diced
1 Tbsp garlic, minced
1 lb lean ground beef
½ tsp burger seasoning
½ tsp salt
¼ tsp black pepper
2 — 14.5 oz cans diced tomatoes
2 Tbsp tomato paste
2 Tbsp Dijon mustard
2 cups reduced-fat, shredded cheddar cheese
Optional*:
¼ cup hamburger dill chips, chopped
*Optional ingredients are not included in nutritional calculations.
Instructions
Preheat oven to 350 degrees, and spray a 9" x 13" casserole dish with nonstick cooking spray.
In a large stock pot, cook pasta according to package directions, drain and set aside.
In a medium skillet, add olive oil and cook onions and garlic for 1-2 minutes.
Add ground beef and cook until browned. Add salt, pepper and burger seasoning to ground beef while cooking.
Add in tomatoes, tomato paste and mustard.
Allow the mixture to cook and thicken until bubbly.
Add the pasta to sauce and mix to cover evenly.
Transfer mixture to casserole dish.
Top with cheese and bake for 20-25 minutes.
Remove from oven and top with chopped dill pickles before serving (optional).

I'm back



I want to apologize to all of you for my lack of posting! Blogging is something that I love to do, and I'm very mad at myself for not making the time to do it. For the last month I have been fighting being sick, and trying to stay consistent with my exercise, which has not been good. This week, I'm feeling a little better so I am renewing my commitment. Yesterday I ran 8.06 miles, which is right on track in my training plan for my 1/2 marathon in December, so I'm very happy about that, but I need to get on track during the week,and not allow life to get in the way.

I was a little nervous, because sometimes protein bars tend to bother my stomach, and don't taste that great. With these having 15 grams of protein, that could've easily been a reality, but not the case. These bars tasted extremely yummy and I didn't suffer any tummy aches after eating them. I have to say that while they all tasted great, the cashew and vanilla bar was my favorite. It was a great breakfast after my long runs, and it definitely satisfied my hunger. I am definitely going to keep some of these in my house for when I want a quick meal.  Because vanilla was my favorite, I'm sharing its nutritional value, though the other two are very similar.

Block Island Organics Review



I had the opportunity to try Block Island Organics sunscreen over the past couple of weeks. Block Island uses high quality ingredients, while keeping the price affordable. Their sunscreens are non-toxic mineral based (zinc and titanium), as opposed to chemical based, and include a Baby SPF 30 (this product is zinc only), an SPF 15, SPF 30 and SPF 40 product.  Our products are non-comedogenic, vegan formulated, paraben free, phthalate free, nano particle free, artificial fragrance free, non-eye irritating, not tested on animals, made in the USA and highly rated by the Environmental Working Group. Now that we've gone over ingredients, let me tell you what you really are here to learn. What did I think of it? I have tried other mineral based sunscreens, and while they worked fine, they didn't spread well, and I looked like the white monster. Block Island blends well into the skin and it also protects well. They recommend reapplying every 45 minutes, but I went 4 hours while sweating when we were ziplining, and I did not burn at all. Also, I have sensitive skin, and had no irritations whatsoever after using it multiple times over the last few weeks. I definitely give this sunscreen an A+.

Mamavation Monday - weekly recap



I apologize to all my readers because I have been slacking on my postings lately. I hope to get back on track now. Well, I kind of slacked with my working out this past week, because I was getting us ready to go camping and to the NASCAR races in Daytona. I did do Turbo Fire HIIT 15 on Monday, and a virtual 5K on Tuesday. The weekend was spent walking tons, and swimming :)



Mamavation TV tonight is going to be awesome. They are talking about strength training for women which is such an integral part of working out and losing weight. I cannot wait! Race Ragz Review and Giveaway

Last month, thanks to my friend Jenny over at Jenny Hodges is Metamorfit, I got the opportunity to order a tech shirt from Race Ragz. Mamavation Monday - weekly recap


Happy Monday!!! I'm very excited today for 2 reasons. The first, after a long worthwhile wait, I was finally matched with my buddy. What does that mean? Well, he will be my motivator for running, and fitness and I will be doing it for him. It's so exciting!!! If you are interested, you can sign up here. Second, I just finished the #2weekchallenge and I am down 2.5 lbs, and an inch each on my waist, hips and thighs. This was the kickstart I needed and I hope the weight continues to drop :)  Ok, so here's my recap for last week -

I'm sure there will be some basketball and bowling mixed in there :) In a week or 2, I am going to repeat the #2weekchallenge on my own. I think it's something extra my body needs to do monthly.

Mamavation Monday weekly recap :)



Happy Monday!! Last week was an awesome week.... the scale finally started moving and I lost 1.6 lbs. I'm so excited, and hope that this downward trend continues. I can't help but think adding the #2weekchallenge in helped with that. Who else is doing the challenge with me? Are you loving it??

Weight Gurus Digital Bathroom Scale Review



The wonderful folks over at Weight Gurus have developed a new scale and they asked me to check it out for them. First of all this scale has a neat concept. They have a free app associated with it that you can download to your smartphone. On this app, you set up all your information, and your weightloss goals. Here you can also decide if you want to track your weight or the amount of weight you have lost. I think the coolest part of this app is how you sync the weight entry to your app. Once you have weighed yourself, the scale shows sort of a code, and you take a picture of the code in the app and it automatically syncs.


Another cool thing about this scale is that it allows for there to be 4 separate users on the scale, so you don't have to worry about your family's weight getting mixed up with yours. The scale is modern looking and light weight, and doesn't take up tons of room. The only downfall I see with this scale is that the app encourages you to weigh everyday. That might cause a little discouragement if you are trying to lose weight because we all know how much our weight fluctuates during the week.

Mamavation Monday



Happy Monday all, it's been a busy day for me as I've been at the Special Olympics Torch Run for most of the day. So much fun, but that's for another post. :) Last week I did the 7 day slimdown challenge and did pretty well. I only lost like a 1/2 lb, but the clean eating felt amazing. I did pretty well on the exercise route too. Here's my recap -

Happy Monday! Well last week was a pretty decent week for me working out wise. I'm still working on my diet, though. This week I'm doing a 7 day slim down challenge based on something Shaun T posted. So far, so good, but we're only 2 meals into day 1 :) Here's my recap -

Weekly Wrap UP

I'm  a few days late, so I didn't want to call it Mamavation Monday. LOL. I had a pretty decent week last week. Most of it consisted of playing with my boys outside though, that is my favorite!!!! Here's my wrap up -

Monday - 1 hour of basketball with the kids
Tuesday - 30 mins of basketball with the kids
Wednesday - dog walk, and bowling
Thursday - circuit training, 2.25 mile run
Friday - Mash Up conditioning

I hope to have some play time with the boys in there, too. With daylight savings, we have such a great opportunity to do that :) I'm looking forward to when it gets a little warmer, so we can add some swimming in there, too :)

Bamboo Bathtub Caddy Review


I know we all can use a break once in a while, like a nice hot bath. Even though it's hard to find time as a mom to indulge, we need to. It's relaxing and good for our body and soul. When I do get to take a bath, I like to enjoy a glass of wine and read a book while I'm in there. Truly cleanses my mind. Well thanks to the wonderful people at Toilettree Products, I got to review this awesome bathtub caddy. This caddy is beautiful, well made and sturdy. The sides extend so that it can fit most bathtubs. On the left it has a slot where you can slide the stem of a wine glass, in the middle is where you can rest your book, and then on the right there is a spot to put your cell phone, or maybe a MP3 player so you can listen to music while you're relaxing.



While I don't get a lot of time to myself, when I got this caddy in the mail I told my hubby I was taking a bath that night so I could enjoy it, and I did :) It was great to be able to combine reading with the bath and not worry about the book falling into the bath. I also loved the wine holder, because otherwise I put the wine glass on the counter and it's not easily in reach and I have to stand up in the tub. Not convenient at all, and besides it's cold when you get out of the bath. I hope to have many more enjoyable moments using my caddy :D

Mamavation Monday



Happy Monday!!! I had an extremely busy weekend. Friday night, my oldest performed with his jazz band in a Jazz Revue dinner and concert. It was his band, the middle school jazz band, and the other high school band. They all performed with a guest musician named Scott Wilson. He was amazing!!! I helped out with the event, and we didn't get home until after 11:30. It was so much fun, but tiring. I am truly in awe with talent that was on that stage that night. Saturday, the jazz bands had to meet at school at 6:15 am to go to the State Jazz MPA Competition. My son's jazz band scored all excellents, and the other high school jazz band scored all superiors. This is amazing because the judges score these bands as if they were college bands. We took him to lunch after to celebrate his success. The rest of the afternoon, I played basketball with my youngest, and raked and bagged leaves. You would think after the 2 hours I spent on the yard, it would look like I made a difference, but it didn't. Then finally, on Sunday my oldest and I set up to sell candy bars for the band during a bowling tournament. We spent all day there, and sold almost 3 boxes of candy. Pretty good. I finished the day by taking the dog for a walk, and playing a sort of football type game, where my kids tried to kill me. After being tripped, and making contact with my nose/lip to my youngest's head, I was done for the day.... man did that hurt. I'm sporting a bit of a swollen lip and a sore head, but it was worth it.... they all had fun. Okay, here's my recap for last week -

Hipssister Review



If you're like me when you go out for a run you bring a few things with you like your phone, a car key, chews, etc. Well, I've tried a few other belts, and they've always rode up, and twisted on me. I would have to keep pulling the belt down. I got the opportunity to test out a new belt called the hipssister. Let me say I love this belt. It fits what I carry, and it doesn't flip or ride up on me. The style I chose was the Left coast hipssister and of course it was in pink, but they have many different varieties and colors on their site.


There are 2 zipper pockets, on in the front and one in the back, and a slit on the top that makes another pocket which is for your phone. When you wear it make sure that pocket is in the front. It's really convenient to have the phone pocket because you can just slide it in and out instead of having to unzip the pocket to pull it out and zip it back up after you put the phone back in. My only issue is that the pocket is a little short for my phone. I have the Samsung galaxy 3 and it's a big phone. Another worry of mine was that it might be hot, because it's wider than my previous belt. I have not found that to be a problem yet, and I am in central Florida and I run in the evening when it's the hottest. It's easy to care for, normal wash and dry, and it's reasonably priced. The one I'm wearing sells for $28.99, which is a comparable price to all the other belts out there.

I wholeheartedly recommend you check this belt out, even if you aren't a runner. It would even be convenient and stylish to wear when you're walking through the amusement parks, or going to the club. Mash Up Conditioning Review and Giveaway



The folks at Mash Up Conditioning sent me this awesome new workout DVD to review and give another copy away to one of my lucky readers. This is an awesome workout program for all levels of fitness, and it's very unique. First it offers 3 different people to follow depending on how you feel, and she even offers a few variations to do to each level if you are in between levels. Second, each workout program is 15 minutes, but you can do 2 or 3 of the workouts if you don't think the 15 minutes is enough. They provide you with a training plan that shows you which workouts you should combine.


Now to delve into the actual workouts. Each workout has 5 minutes of strength training, 5 mins of HIIT cardio workouts, and 5 minutes of Mind and Body which is your core workout, and there are 7 different workouts to choose from. I have been staying with the level 2 variation, and it has been very intense for me :) I definitely can feel my workout. Another great thing about this program is that it's designed to be done three times a week, so you don't have to give up your favorite workout. You can do those on the opposite days. It's been great for me, because I'm a runner, so I run 3 times and week and do Mash Up 3 times a week.

Let's just say this one is staying in my rotation. I absolutely love it.

Mamavation Monday - Less Stress More Calm



Happy Monday. I had a great, but busy weekend. Saturday my oldest performed with his band at a concert band competition and got straight superiors, which means they can now perform at the state level, and Sunday both my boys competed in a bowling tournament. They did very well, can't wait to find out the official results. I didn't get in enough runs again last week, but I did run my longest run in quite a while. Here's my wrap up -

Mamavation Monday

Mamavation Monday - preventing your children from toxins



Well I had a pretty decent week last week. I got in 2 out of my 3 runs, and did my XT. I also lost 1 lb!!! YAY!! Let's hope it stays off. Here's my recap -

This week my goal is to continue with Mash Up Conditioning for my XT and get 3 runs in. I also am working on portion control and drinking at least 64 oz of water per day.

Today's Mamavation TV is about minimizing our children's exposure to toxins. This is really near and dear to my heart because I want my children to be healthy and happy, and toxins can put a stop to that. Sunshine burgers review



I got the pleasure of being able to test out and review sunshine burgers. Sunshine burgers are vegan, non-GMO, gluten-free and USDA organic. All awesome words in my book :) I have tried different non-meat burgers, and honestly haven't been extremely impressed, but I find the sunshine burgers to be actually really good. They have 8 different varieties and all are made with a mixture of vegetables, beans, brown rice or hemp seed. And they are super easy and quick to make. They are already fully cooked, so you are just basically reheating them.

Since, I'm not extremely creative, I didn't make to elaborate of recipes. I made a traditional burger with the black bean southwest burger. Absolutely yummo!!!



And, then I decided to go crazy with the mushroom burger, and do a chili cheese burger on an english muffin. Again, yummo!!!



But they have a ton of recipes on their page, that I plan on trying with some of the other varieties they offer.

This is definitely a great option for me to have quick, healthy lunches since I usually workout during lunch. This way I can get my 1/2 hour workout in, and then make a quick burger and still eat whole.

So now that I have you hooked and ready to run out and buy them.... where do you get them, you wonder? I am lucky enough to have it at my favorite grocery store, but here's the link where you can find yours.

Mamavation Monday - Removing toxins from your home



Happy Monday all..... I'm staying consistent with some of my workouts, but I really need to step it up and also work on portion control. Here's my recap for the week -

Didn't get much down this weekend, I'm still battling this cough and have been feeling a bit rundown. Hoping that I get an upswing really soon. My goals for this week are to continue the Mash Up Conditioning on my XT days and run on Tues, Thurs and one day this weekend.
