Angel Hair with Smoked Salmon & Goat Cheese

This is a great entrée for entertaining. The ingredients are elegant, light, and it’s visually appealing, plus the preparation takes just minutes—perfect for a post-group-run lunch, or a pre-marathon dinner with friends.
Ingredients
1 lb. angel hair pasta
1/4 lb. smoked salmon, 1/4-inch diced
1/3 cup red onion, finely chopped
3 tbls. capers, rinsed and drained
1 tbls. grated lemon zest
6 oz. soft goat cheese (Chevre or Montrachet), crumbled
1/4 cup fresh dill, chopped (plus 4 sprigs for garnish)
Freshly ground black pepper
1 lb. angel hair pasta
1/4 lb. smoked salmon, 1/4-inch diced
1/3 cup red onion, finely chopped
3 tbls. capers, rinsed and drained
1 tbls. grated lemon zest

1/4 cup fresh dill, chopped (plus 4 sprigs for garnish)
Freshly ground black pepper
Preparation
- Cook pasta until tender and firm to the bite. Drain, reserving 1/2 cup pasta water.
- Return pasta to pot, add remaining ingredients including pasta water, and toss to combine.
- Heat over medium heat for two minutes.
- Season with pepper to taste.
- Serve hot.
- Garnish with dill sprigs.
- Serves 4.
